🫒The Difference Between Virgin and Extra Virgin Olive Oil (EVOO)
Virgin Olive Oil: Oil that’s been removed from the olive only by mechanical (pressing, crushing) or other physical means (heat). Virgin olive oil is permitted some defects as well as a higher level of acidity (free fatty acids).
EVOO: A virgin olive oil that — according to USDA standards — has “excellent flavor and odor.” For example, zero defects and some fruitiness… just like me! Jokes!
When olive oil has a “lampante” rating
It means it’s not fit for human consumption. This isn’t the same as saying it’s unsafe. It basically means it has a long way to go (refinement) before tasting like a thin slice of heaven. Think: rancidity, high free fatty acids, etc. The USDA refers to “lampante” olive oils as “ordinary.”
